在釀造理念上,他們堅持全手工採收,只使用在地原生品種,與農民建立長期合作關係並保障價格。所有酒款皆為有機認證,使用整串低壓榨汁以保留最純淨的酒液,並維持低pH值以利長時間熟成。釀造過程完全在酒莊內進行,採取極低干預的方式,不使用酵素,只用原生酵母,並盡量減少二氧化硫。氣泡酒使用天然軟木進行長時間熟成,手工轉瓶與手工除渣,甚至在常溫下完成這些工序。這一切的核心只有一件事,用一塊土地釀出誠實的酒。
整體來看,Viader的核心並不只是釀造氣泡酒,而是透過極致手工、長時間熟成、有機與低干預的方式,把 Penedès 的風土與時間完整呈現在酒中。
土地的原始旋律,如同一場交響樂,將酒莊與這片風土緊緊相連,也提醒著他們最本質的存在。
在壯麗的Garraf山體與濱海山脈的庇護之下,Penedès是一片充滿對比的土地。介於Anoia河谷與Foix河之間,多變的地形、微氣候、海拔與向陽條件,形成了三個子產區,各自孕育出不同的土壤類型,也造就風格獨特且卓越的葡萄酒。
在La Llena 莊園,他們的葡萄藤扎根於黏土質、壤土質、石灰質以及淺層土壤之中,且土壤pH值偏低,這樣的條件特別適合釀造具備長時間陳年的氣泡酒。
Penedès 地區擁有典型的地中海型氣候。在初夏溫暖的午後,葡萄園中那種陽光落在果皮上的觸感,是難以被取代的經驗。來自海岸的微風在夜晚與清晨帶來涼意,而環繞中央平原的山脈則阻擋了寒冷氣流的侵襲。

葡萄藤的個性
傳統品種,是連結土地與歷史最核心的元素。
Xarel·lo與Macabeu是他們白葡萄氣泡酒的基石,這是一種來自數世紀釀酒傳統的經典調配,也是一種延續土地真實性的方式。
在單一品種酒款中,紅色格納希(Grenache)與Xarel·lo則成為Viader風格的代表。這些葡萄來自單一地塊,展現出最純粹、最貼近風土的表達。
在粉紅氣泡酒與Deliris系列中,他們有時也會使用來自其他產區、但已完美適應Penedès的原生品種,為風格帶來更多層次與可能性。
Can Rossell de la Llena
2020年,在Sant Sadurní邊緣壯麗的風景之中,Eduard Viader發現了一座被葡萄園環繞、早已荒廢的老農舍——Can Rossell de la Llena。
儘管這座莊園長期被忽視,但在Eduard Viader的眼中,它的美從未被掩蓋。恰恰相反,他幾乎在第一眼就確信,這將是他人生重要篇章持續展開的地方。
懷抱著「沒有任何力量比夢想更強大」的信念,幾個月後,在2021年9月4日,Eduard Viader正式在Can Rossell de la Llena開始釀造屬於他的葡萄酒。
這座La Llena莊園的歷史可追溯至14世紀。1883 年,其測量圖由Antoni Gaudí繪製,具有極高的歷史價值——因為這位加泰隆尼亞建築師曾以測量師身分工作的面向,過去幾乎不為人知。

La Llena 的土壤

在Celler Viader,他們一直覺得自己就是Penedès的一部分。不是來「做酒」,而是去理解這片土地本來的樣子。每一塊土壤、每一個小區域,都有自己的性格。他們做的,只是把它們好好地表達出來。這件事情,其實遠遠不只是釀酒,更像是一種選擇——選擇忠於土地,也對未來負責。
The story of the Viader family is inseparable from wine. Celler Viader represents the personal winemaking journey of Eduard Viader, who comes from a family of doctors and pharmacists that has been rooted in Sant Sadurní d’Anoia since 1823. Beyond their medical heritage, the family also passed down profound knowledge of winemaking through generations in the Penedès region.
Eduard, an agricultural engineer with a deep passion for the land, decided at the age of 21 to continue his family’s winemaking tradition. In 2009, he produced his first Viader sparkling wine. After more than a decade of dedication, he gradually developed his own style in a small cellar in Sant Sadurní. In 2018, he discovered an old farmhouse surrounded by vineyards called Can Rossell de la Llena and chose it as the starting point for the next chapter of his life. Winemaking officially began there in 2021. In 2025, Viader became the 14th member of Corpinnat, symbolizing its strong commitment to quality and the value of origin.
The family’s connection with wine is uniquely profound. From Eduard’s great-grandfather, who founded a laboratory in 1912, to his grandfather, who was among the first to study yeast under a microscope, every generation has contributed to this story.
Can Rossell de la Llena is the heart of Viader — both the winery and the place they call home. Hidden among vineyards, the estate embodies their relationship with the terroir. All sparkling wines are handcrafted here, with a strong focus on expressing the individuality of each vineyard parcel. Sustainability is not a slogan, but part of everyday life: they use solar energy, recycle rainwater for irrigation, travel by electric vehicle, use lightweight glass bottles, and have completely eliminated plastic capsules. For them, viticulture is not simply agriculture, but a way of understanding the rhythm of life and the surrounding environment.
Their winemaking philosophy is equally uncompromising. All grapes are harvested by hand, using only indigenous grape varieties. They maintain long-term relationships with growers and guarantee fair prices. Every wine is organically certified. Whole-cluster gentle pressing is used to preserve the purest juice, while naturally low pH levels support long ageing potential. The entire vinification process takes place within the winery under a philosophy of minimal intervention — no enzymes, only native yeasts, and minimal sulphur use. Their sparkling wines undergo long ageing with natural cork closures, followed by hand riddling and manual disgorgement, even performed at ambient temperature. At the core of everything lies one simple purpose: to make honest wine from a single piece of land.
Ultimately, Viader is not only about crafting sparkling wine, but about expressing the terroir and the passage of time through meticulous handcraftsmanship, extended ageing, organic farming, and minimal intervention.
The primal melody of the land resembles a symphony, binding the winery inseparably to its terroir while reminding them of their most essential identity. Protected by the majestic Garraf Massif and the coastal mountain ranges, Penedès is a land of contrasts. Situated between the Anoia Valley and the Foix River, its varied landscapes, microclimates, altitudes, and sun exposures create three subregions, each with distinct soil types and wines of remarkable character and quality.
At the La Llena estate, the vines are rooted in clay, loam, limestone, and shallow soils with naturally low pH levels — ideal conditions for producing sparkling wines capable of long ageing.
Penedès enjoys a classic Mediterranean climate. On warm early summer afternoons, the sensation of sunlight touching the grape skins in the vineyard is something impossible to replace. Coastal breezes bring coolness during the evenings and early mornings, while the surrounding mountains shield the central plains from cold air currents. The Mediterranean spirit permeates every corner of this land — from the gentle breeze caressing the vines to the golden sunlight ripening the fruit to perfection.
The Personality of the Vines
Traditional grape varieties are the purest connection between land and history. Xarel·lo and Macabeu form the foundation of their white sparkling wines — a classic blend rooted in centuries of winemaking tradition and a faithful expression of the land’s authenticity. In their single-varietal wines, Grenache and Xarel·lo become signatures of the Viader style. These grapes come from individual vineyard parcels, expressing the most precise and terroir-driven character possible. In their rosé sparkling wines and the Deliris range, they occasionally work with indigenous varieties from other regions that have adapted beautifully to Penedès, adding further complexity and dimension.
Can Rossell de la Llena
In 2020, amidst the magnificent landscape on the edge of Sant Sadurní, Eduard Viader discovered Can Rossell de la Llena — an abandoned farmhouse surrounded by vineyards. Although neglected for years, its beauty was never hidden in Eduard’s eyes. On the contrary, he immediately knew this was where the next important chapter of his life would unfold. Guided by the belief that “there is no force more powerful than dreams,” Eduard officially began making his wines at Can Rossell de la Llena on September 4th, 2021.
The history of Can Rossell de la Llena dates back to the 14th century. In 1883, its survey map was drawn by Antoni Gaudí, a detail of immense historical value because this lesser-known aspect of the Catalan architect’s work as a surveyor had long remained almost unknown. The estate was originally owned by the Casa Ravella family of Ordal de Subirats, later passing to the Olcinelles family, then the Camps family of Girona. Finally, in 1885, it was acquired by the Bosch family of Anoia and became part of the Sant Sadurní family estate tradition.
The Soil of La Llena
The soils of La Llena tell the story of land once submerged beneath the sea. Around sixteen million years ago, these lands emerged from the ocean, gradually weathering and evolving into the vineyards of today. Conglomerates, sandstone, marl, and siltstone create a subtle yet deeply distinctive soil structure at the foot of the Ordal mountains — not overly stony, but rich in calcium carbonate, dry and warm, limiting the easy movement of nutrients.
This is not generous land. Water is scarce, yields are low, and the vines must struggle to survive. Yet precisely because of these conditions, the grapes achieve remarkable balance — sugars, acidity, and depth of flavour held tightly within the fruit.
Their wines are made by hand — hands rooted in the land itself, guided by patience and respect. Within the wines lies not only flavour, but also an inseparable connection between humanity and nature.
At Celler Viader, they have always believed they are part of Penedès itself. They are not here simply to “make wine,” but to understand the true nature of the land. Every soil, every parcel, carries its own personality. Their role is simply to express it honestly. In the end, this goes far beyond winemaking — it is a conscious choice to remain faithful to the land while taking responsibility for the future.
